-2 lbs. game bird breasts (dove, quail, prairie chicken, or even duck hearts)
-1 cup sherry or port
-3 Tbsp olive oil
-J. Brady's Cowboy Shake
-6-10 Rosemary stalks (wooden skewers work too)
Ensure all pieces of game are roughly the same size (1-2" shapes). Marinate game in sherry or port and olive oil for at least 4 hours or up to over night. Heat a gril to medium high heat. remove meat from marinate and thread onto skewers. Season liberally with J. Brady's Cowboy Shake.
Grill skewers until medium rare or medium (to your preference. About 3-4 minutes er side).
Game can dry out so feel free to brush olive oil on skewers as they cook. Enjoy!
