Mardi Party Cajun Wings

Ingredients:

  • 1 lb. chicken wings
  • 1 tablespoon of J. Brady’s Pop’s Cajun Shake
  • 1 tablespoon olive oil
  • 1 teaspoon or drizzle of honey
  • celery and carrots cut into strips (optional)
  • bleu cheese dressing (optional)

Method:

Pat all the chicken wings dry with a paper towel. To better impart flavor and help render the skin during slow cooking, make 2-3 slits perpendicular to the bone through skin and flesh on each side of the chicken wings. Rub wings generously with seasoning and let sit for 10-15 minutes.

Place wings in a cold (very important) pan and drizzle olive oil. Turn heat to low, about a 2 out of 10. Think of this like cooking bacon or rendering a duck breast, Low and slow.

Once the wings begin to sizzle, flip them every 2-3 minutes for 15-20 minutes until crispy, golden, and cooked through. Don’t be afraid to go longer at a lower temperature. Turn the heat off the pan, drizzle with honey, and toss well to coat. Serve immediately with carrots, celery, and bleu cheese.
